Spaghetti with chicken and shrimp mix and pistachio pesto

  • 160g Monte Banato durum wheat spaghetti
  • 2 boneless and skinless chicken thighs from Fragedo
  • 75g husked shrimp
  • 10g chopped garlic
  • 150ml tomato sauce
  • 100g raw pistachio
  • 100ml olive oil
  • 50g parmesan
  • 100g basil leaves
  • salt
  • pepperoncino

Step 1: For the pistachio pesto, start by peeling the pistachio and add it to a blender, along with the olive oil, shaved parmesan and basil leaves.
Step 2: Cut the shrimp and the chicken breast.
Step 3: In a hot pan, add the olive oil, garlic and pepperoncino.
Step 4: Add the chicken and shrimp to the pan and after a few minutes of cooking, add the tomato sauce and let it simmer.
Step 5: In the meantime, boil the pasta as said on the package.
Step 6: Add the pasta to the pan and mix it with the chicken and shrimp.
Step 7: Serve the pasta on a platter and top with Parmesan shavings, thyme, oregano and pistachio pesto.
