Shell pasta with peas and mint

  • 300g Monte Banato shell pasta
  • 300g peas
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 6 mint leaves
  • 100g shaved Parmesan
  • 200ml cooking cream
  • 1 garlic clove
  • 1 tablespoon olive oil
  • the zest of 1/2 lemon

Step 1: In a pot, start boiling the water with salt.
Step 2: Add the peas and let them boil.
Step 3: Strain the peas, but don’t throw out the water. Save it and boil the pasta in the same pot.
Step 4: Chop 6 mint leaves and add them to the peas, along with the Parmesan, cooking cream, crushed garlic, olive oil and lemon zest.
Step 5: Smash the mixture to get a cream-like texture and season with salt and pepper.
Step 6: Strain the pasta and add it to the pea mix.
Step 7: Serve on a plate and top with Parmesan. Enjoy!
