Farfalle pasta with walnuts and cinnamon

  • 400g Monte Banato bow-tie pasta (Farfalle)
  • water and 1 teaspoon salt
  • 100g butter
  • 200g finely chopped walnuts
  • 100g brown sugar
  • 1 tablespoon ground cinnamon
  • finely grated zest of 1 organic lemon
Method

Step 1: Bring a large pot of water to a boil. Once boiling, add the salt and the pasta, then cook according to the package instructions until al dente.

Step 2: While the pasta is cooking, melt the butter in a wide pan over low heat, taking care not to let it burn.

Step 3: Add the chopped walnuts and brown sugar to the melted butter. Stir well until the sugar begins to dissolve and the walnuts become lightly caramelized.

Step 4: Turn off the heat and add the cinnamon and finely grated lemon zest. Stir to release the aromas.

Step 5: Drain the pasta, reserving about 50 ml of the cooking water. Transfer the pasta to a large bowl.

Step 6: Add the butter, walnut, and sugar mixture over the pasta, along with the reserved pasta water.

Step 7: Mix very well until the pasta is evenly coated and the flavors are perfectly combined.
