Cold pasta salad

  • 200g Monte Banato bow-tie pasta (Farfalle)
  • 1 red bell pepper
  • 1 medium cucumber
  • ½ small red onion
  • 120–150g canned sweet corn
  • 1–2 cans tuna in water or oil
  • 80–100g semi-hard cheese
  • 150g yogurt
  • 1–2 tablespoons mayonnaise
  • Juice of ½ lemon
  • 1–2 tablespoons parsley, finely chopped
  • salt and black pepper
Method

Step 1: Dice the red bell pepper, cucumber, and red onion into small cubes.

Step 2: Grate the cheese using a coarse grater.

Step 3: In a bowl, mix the yogurt, mayonnaise, lemon juice, chopped parsley, salt, and pepper until smooth and well combined.

Step 4: Cook the pasta: Boil the pasta in salted water according to the package instructions. Drain well without rinsing, then transfer to a large bowl.

Step 5: Add the diced vegetables, sweet corn, drained tuna, grated cheese, and dressing to the pasta.

Step 6: Toss gently until everything is evenly coated and serve.
