Shrimp Tagliatelle

Ingredients
  • 400g Monte Banato Tagliatelle
  • 300g peeled shrimp
  • 3 garlic cloves
  • 40g butter
  • 2 tablespoons olive oil
  • 120ml dry white wine
  • 300ml cooking cream
  • 200g cherry tomatoes
  • juice of ½ lemon
  • salt and black pepper
  • fresh parsley, for serving
Method

Step 1: Heat the olive oil and butter in a large pan. Add the crushed garlic and sauté for a few seconds, until fragrant.

Step 2: Add the shrimp and cook for 2–3 minutes, turning them, until they change colour and turn pink.

Step 3: Pour in the white wine, season with salt and pepper, and let it simmer for 2–3 minutes, until the alcohol evaporates.

Step 4: Add the cooking cream and simmer over low heat for a few minutes, until the sauce thickens.

Step 5: Add the lemon juice and cherry tomatoes to the sauce, stir gently, and cook for another 1–2 minutes.

Step 6: Separately, cook the pasta in salted water according to the package instructions.

Step 7: Drain the pasta, reserving a little of the cooking water, then add it to the sauce. Mix well and cook for 1 more minute.
