Pasta with lentil ragu sauce

  • 500g Monte Banato egg-free spaghetti
  • 2 tablespoons olive oil
  • 1 big onion
  • 3 garlic cloves
  • 1 apio celery
  • 1 big carrot
  • 5 mushrooms
  • 400g lentil
  • salt
  • pepper
  • 300ml tomato paste
  • 300ml vegetable soup

Step 1: Add the olive oil to a pan and cook the onion and garlic.
Step 2: Add the apio celery and the carrot.
Step 3: After a few minutes of cooking add the mushrooms and the lentil. Season with salt and pepper.
Step 4: Pour the vegetable soup and tomato sauce over the mix and let it simmer.
Step 5: While the sauce is cooking, start boiling the pasta as said on the package.
Step 6: After the pasta has cooked, strain it, add it to the ragu sauce and mix.
Step 7: Serve it on a plate and top with basil leaves.
