One pot vegetable pasta by Chef Jakob Hausmann

  • 1 onion
  • 8 cherry tomatoes
  • 400g Monte Banato shell pasta
  • 600ml water
  • 200ml cooking cream
  • 1 teaspoon paprika
  • 240g canned white beans, drained
  • 150g baby spinach
  • 120g fresh mozzarella
  • 1 bunch chives
Method

Step 1: Chop the onion and cherry tomatoes, then sauté them in a pan with a little oil.

Step 2: Season with paprika, salt, and pepper, and cook over low heat.

Step 3: Add the uncooked shell pasta to the pan with the vegetables.

Step 4: Pour in the cream and water, then simmer over low heat for 15 minutes.

Step 5: After 15 minutes, add the spinach and white beans, stir, and cook for a little longer.

Step 6: Turn off the heat and add the mozzarella balls.

Step 7: Sprinkle with freshly chopped chives and garnish with fresh mozzarella.
